The farming is in conversion to fully organic thanks to the fine folks at Maloof and Fossil & Fawn who are now buying all of the fruit produced at the vineyard

The 2019 Grolleau macerates for 10 days

Chardonnay 40 % Grenache Blanc 30% Vermentino 20% Macabeu 10%

and still quite some residual scents from its spontaneous fermentation

Aged for 12 months, minimal sulfur, added only at bottling.
